IBEX Cafe and Kitchen brings a beautiful brunch to Burke Mountain

With a stunning view on the side

OK. We are still not over this brioche. 

IBEX Cafe and Kitchen opened on Burke Mountain last month, finally bringing some brunch to the bustling area. 

Naturally we had to check it out with a full meal, starting with the creamy yet crunchy, light yet filling, and somehow totally vegan chickpea souffle. The vegetables were fresh, the entire thing was housemade, and we can assure you that we will be coming back for this in the future.

Next up was the spinach cheese brioche, which tasted as good as it looks! It had just the right amount of cheese, spinach, and salt, and was soft on the inside and satisfyingly crispy on the outside. 

We paired these items with the soy cappuccino, which—surprise, surprise—was delightful. 

IBEX specializes in sandwiches, bowls, and coffee, though you can even get some cocktails at this newly opened spot. 

Those who frequent the Beanery Cafe and Eatery may recognize some tastes, as IBEX is run by the same owners.

And while the food and drinks on offer at IBEX were definitely worth the recommendation, the cafe’s true draw is its location: situated high up Burke Mountain, it offers a stunning view of Coquitlam, Port Coquitlam, and the forested area surrounding it. We wouldn’t blame you for taking your coffee to go and having a walk in the woods!
